What a wonderful opportunity for Budehaven’s catering students this week to see Michelin-starred chef, Peter Gorton, in action in their school. The Master Chef joined Head Chef of the Falcon, Michael Moore, to inspire young people at the local secondary school to learn about food preparation but also to think about a catering career at the Falcon. The Falcon’s controlling shareholder, Rupert Brendon, also attended the session.
Michael Moore has been head chef at the Falcon for 28 years, and is a Birmingham City FC supporter which can’t be bad! Peter Gorton is now a consultant. He began his career at 16 and has trained around the world. He became proprietor of The Horn of Plenty Country House Hotel, gaining many national awards and accolades including a coveted Michelin Star. He also worked at The Carved Angel restaurant, cafes in Exeter, Taunton and Dartmouth and Gorton’s restaurant, Tavistock in Devon. He now additionally runs cookery courses at Dartmoor, and has written two books. A signed copy of his publication, An Invitation to Cook, was presented to one lucky Budehaven student, Jade Goatcher.
At the event organised by teacher, Anne Hassall, the students were fortunate to be able to watch Peter, ably abetted by Michael, prepare a Thai Chicken Salad, which they could then taste. Knowing his audience, he also brought along brownies.
Telling them his own favourite food is crab, he showed them how to prepare a Japanese avocado, how to cut vegetables without slicing their fingers off, and explained about the heat in chillies, why chefs remove the seeds from cucumbers, how to store coriander in the fridge and why saffron is so expensive, among other gems.
Lively, fast-paced and down to earth, the chefs both educated and entertained the students who were attentive and asked numerous questions. Peter runs a ‘Food is Fun’ programme for schools to promote healthy eating, the fun of cooking, and how to produce tasty food.
It was certainly a success for the students at Budehaven, hitting just the right note combining education and fun.
